The hardness test on gelatin according to Bloom is well defined in the British Standard BS 757. The test is recognized and accepted outside the borders of Great Britain and is used by many gelatin producers.

In this test a cylindrical compression die is pushed into the gelatin at a constant speed. The maximum force required to penetrate 4 mm into the gelatin gives information as to the firmness (Bloom value) of the gelatin.
